Fish fry
Ingredients
*Mackerel fish – 1/2 kg.
*Dried chilies – 6 nos.
*Ginger – 1 big piece.
*Pepper – 1 teaspoon.
*Coriander – 1 teaspoon.
*Garlic – 6 cloves.
*Turmeric – 1/2 teaspoon,
*Salt – as required.
*Coconut oil – as required to fry.
Method
1) Clean the fish, with salt and tamarind infused water.
2) Make a paste with dried chilies, ginger, pepper, coriander, garlic, turmeric, and salt.
3) Rub in the paste into the fish.
4) Heat oil and fry the fish.
Beetroot thoran
Ingredients
*Beetroot – 3 nos.
* Shallots – 6 nos.
* Ginger – 1 small piece.
* Green chilies – 5 nos.
* Dried chilies – 3 nos.
* Curry leaves – 2 stems.
* Coconut grated – 1/2 cup
* Mustard – 1 teaspoon.
* Salt – as required.
Method
1) Peel the beetroot and chop them into small pieces.
2) Clean and chop shallots, green chilies, ginger.
3) Heat a pan with oil, splutter mustard and saute in dried chilies and curry leaves.
4) Saute in beetroot, shallots, ginger, and green chilies. Season with salt.
5) Once the beetroot mix is cooked saute in grated coconut. Cover and cook for some time. Thoran ready.
Grilled coconut chutney
Ingredients
*Coconut – 1/2 portion.
* Shallots – 5 nos.
* Ginger – small piece.
* Dried chilies – 8 nos.
* Curry leaves -1 stem.
* Salt – as required.
Method
1) Remove the coconut from the shell and grill it over the flame.
2) Grill dried chilies.
3) Clean and crush grilled coconut.
4) Crush grilled dried chilies and salt. Grind coconut and dried chili.
5) Add in ginger, shallots (5 nos), curry leaves, and grind.
Potato dry fry
Ingredients
*Potato – 3 nos.
* Chili powder – 1 tablespoon.
* Turmeric powder – 1/2 teaspoon.
* Garam masala – 1/2 teaspoon.
* Salt – as required.
* Curry leaves – 2 stems.
* coconut oil – 1 tablespoon.
Method
1) Peel and clean and cut potatoes.
2) Marinate potatoes with chili powder, turmeric powder, and garam masala.
3) Heat oil in a pan, add curry leaves. Once curry leaves are fried saute in garam masala. Add in potato and stir fry.
4) Cover and cook till the potatoes are done.
Egg omelet
Ingredients
*Egg 2 nos.
* Ginger – 1 small piece.
* Shallots – 3 nos.
* Green chilies – 4 nos.
* Curry leaves – 2 stems.
* Grated coconut – 1/4 cup.
* Coconut oil – 1/2 teaspoon.
Method
1) Chop ginger, shallots, green chilies.
2) Add curry leaves, grated coconut, and season with salt.
3) Crack in 2 eggs and beat well.
4) Heat a pan, cook the eggs mix till well done.
How to make the wrap
1) Keep the leaf over the flame still the rawness is gone and pull out the inner skin.
2) To the leaf serve the rice, fish fry, beetroot thoran, grilled coconut chutney, potato dry fry, egg omelet, and pickle. Tie the wrap with string…
