Ingredients
- Beans -1/2 kg
- Potatoes -3 nos
- Coconut oil -2 tbsp
- Dried red chilies -2 nos
- Coriander -1 tbsp
- Pepper -2 tsp
- Cumin seeds: 2 tsp
- Grated coconut -50g
- Peanut: 20g;
- Salt: 2tsp
- Turmeric powder -1 tsp
- Mustard seeds: 2 tsp
- Urud dal: 1 tbsp
- Curry leaves
Method
- Today we’re going to make tasty potato and bean stir-fry.
- For that, first we need to cut and wash beans, and then make the beans into small, medium-sized pieces and keep them aside.
- Then peel the potatoes, wash them, and cut them into long, medium pieces and keep them aside.
- Then heat oil in a pan and add dried red chili, coriander seeds, pepper, and cumin seeds.
- Sauté it well, and then add grated coconut and peanuts to it and roast it.
- Then transfer it to a plate and let it cool down.
- Now grind this mixture in a grinding stone and transfer it in a bowl and keep it aside.
- Now heat oil in a pan and add mustard seeds, urud dal, and curry leaves.
- Mix it and add the beans and potatoes to it and stir.
- Then add turmeric powder and salt to it and mix again.
- Then close the lid of the pan and cook it.
- Open it after a few minutes and stir again.
- Add the grinded mixture to it and mix well.
- Stir it till it becomes dry.
- Tasty potato and bean stir-fry is ready to be served.
