Healthy Kerala style moringa leaf chutney/muringa ila chammanthi

Ingredients

  • Moringa leaves: 50g
  • Shallots: 10-11 nos.
  • Garlic: 7 nos.
  • Dried red chili : 6 nos.
  • Coconut oil: 3 tsp.
  • Urud dal: 1 tbsp
  • Toor dal: 2 tsp
  • Grated coconut, 50g
  • Salt: 1 tsp
  • Tamarind: 2 tsp.

Method

  • Today we’re going to prepare morning leaves chutney.
  • For that, first we need moringa leaves or drumstick leaves.
  • Then peel the shallots, wash them, cut them into small pieces, and keep them aside.
  • Then peel and wash garlic and keep aside.
  • Then take dried red chilies.
  • Then separate the drumstick leaves from the stem and keep it aside.
  • Now heat oil in a pan and add urud dal, dried red chili, and toor dal and sauté it.
  • Then add shallots and garlic.
  • Then add grated coconut to it and add the drumstick leaves and sauté it.
  • Now add tamarind to it and roast it.
  • Then remove the pan from the fire and transfer it to a plate.
  • Then add the dried red chillies and salt to the grinding stone and grind it.
  • Then add the whole roasted mix to the grinding stone and grind it thoroughly by adding water drop by drop till it becomes the consistency of chutney.
  • Healthy Kerala-style moringa chutney is ready.
