Kerala traditional recipe| Shallot kanji | Ooushadha ulli kanji

Ingredients

  • rice/rrose matta rice (250g)
  • Shallot (250g)
  • Jaggery: 100g
  • Ghee: 1 tbsp
  • Dry ginger powder
  • 2 to 3 tsp

Method

  • Today we’re going to make oushadha ulli kanji.
  • For that first, wash and drain the rice and set it aside.
  • Now heat a pan and add jaggery with some water and melt it.
  • Make jaggery syrup out of it and remove from the fire.
  • Then peel all the shallots, wash them, and keep them aside.
  • Then heat a pan and add the rice and roast it till it becomes brown, and then remove it from the fire and set it aside.
  • Then heat ghee in a pan and add the shallot and sauté it.
  • Remove from the fire when it is sautéing well and transfer it to another bowl.
  • Then heat water in a pot and add these shallots and keep it on the stove to get it boiled.
  • By that time, grind the roasted rice in a grinding stone.
  • Then add the jaggery syrup in to the shallots and boil again.
  • Then mix it and boil again.
  • Then add the roasted rice powder, mix it, and boil again.
  • Finally add dried ginger powder in and mix well.
  • Stir it till its consistency becomes thick.
  • Now remove from fire and serve.
  • Oushadha ulli kanji is ready to be served.
