Ingredients
- Eggs – 5 nos
- Onion – 3 nos
- Green chilli – 2 to 3 nos
- Ginger – 1 nos
- Garlic 10 to 12 nos
- Curry leaves – 3 to 4 sprigs
- Tomatoes – 2 nos
- Red chilli powder – 1 1/2 tbsp
- Coriander powder – 1 tbsp
- Turmeric powder – 1/2 tbsp
- Fennel seed powder – 1 tbsp
- Mustard seed – 1 tsp
- Salt – 1 or 2 tbsp
- Oil – 3 to 4 tbsp
Method
- Heat water in a pan, add salt and eggs.
- Boil them well.
- Drain boiled eggs and put in a bowl filled with cold water .
- Heat oil in a pan, add mustard seeds and let them sputter.
- Add crushed ginger and garlic,saute them well.
- Then add the chopped onion and green chilli,saute for a few minutes.
- Sprinkle with salt and saute till the onions become translucent.
- Then add curry leaves and saute them well.
- Then add some curry powders like turmeric powder, red chilli powder and coriander powder.
- Saute till the raw smell completely disappears.
- Then add the chopped tomatoes and saute them well.Cover and cook till the tomatoes become soft.
- Remove the lid and saute them well.
- Then add a sufficient amount of water and mix them well.
- Remove the lid and add some fennel seed powder.
- Saute them well.
- Then, combine peeled boiled eggs with the cooking masala mix.
- Cook for few minutes.
- Remove from fire and keep aside.
- Serve the tasty egg curry with appam or puttu..
Puttu recipe
Ingredients
- Rice flour – 1 1/2 cup
- Carrot – 6 nos
- Sugar – 1/2 cup
- Grated coconut
- Salt – 1 or 2 tsp
Method
- Peel the carrot and set it aside.
- Then we have to chop the carrot and set it aside.
- Take a pan,add chopped carrots and sugar,mix them well.
- Then add rice flour and mix them well.
- Sprinkle some salt and mix them well.
- Heat the vessel with water and allow water to simmer.
- Then we take a puttu steamer and layer with grated coconut
- Again we add rice flour carrot mix
- Then layer with grated coconut.
- Again we have to layer with carrot rice flour mix
- Finally we add grated coconut and level it up.
- Fill it till the top of the mould and cover with the lid.
- Place this mould on top of the simmering water bath.
- Steam passing through the lid hole shows that the puttu is cooked and ready.
- Then we detach the mould from the boiling water bath
- Then push the rice cake with a long stick on to a serving plate.
- Serve and enjoy the Puttu with egg curry.
