Ingredients
- Banana leaf – 1 nos
- Sardines – 10 nos
- Salt – 3 tsp
- Turmeric powder – 2 tsp
- Red chilli powder- 1 1/2tbsp
- Coriander powder -1 tbsp
- Crushed masala paste – 3 to 4tsp
- Coconut oil – 1 tsp
- Grated coconut – 50g
- Thick Coconut milk – 1/2 cup
- Onion – 1 nos
- Curry leaves
- Green chillies – 2 nos
- Tomato – 1 nos
Method
- Today we’re going to prepare tasty sardines in banana leaf
- For that first cut and clean the sardines
- Then add salt , turmeric powder , chilli powder , coriander powder and crushed masala and oil in to sardines and mix it well with hands and keep it aside
- Now take grated coconut squeeze it with hand and collect the coconut milk and keep it aside
- Then heat oil in a frying pan and fry the marinated sardines remove from fire and keep it aside
- Now peel and cut onion and keep it aside
- Cut green chilies and keep aside
- Now heat oil in another pan and saute the sliced onion and add crushed masala paste which has garlic, ginger, pepper , fennel seeds , then add curry leaves
- Then add turmeric powder and red chilli powder and mix it well
- Now add green chilli and tomato pieces in to it and saute well
- Then remove pan from fire
- Now keep the banana leaf on top of the stove and toast it slightly
- Now spread some oil on the banana leaf and add the onion tomato mix and spread it
- Then add the fried sardines on top of it
- Add the coconut milk and curry leaves on top of it
- Now cover the banana leaf and tie it
- Then heat oil in a pan and fry this on both sides
- Remove from fire
- Then open it
- Tasty sardine in banana leaf is ready to serve
