Ingredients
Chickpeas – 1/2kg.
Onion – 5nos.
Ginger 2 big pieces.
Garlic – 1nos.
Tomato – 5nos.
Salt – to taste.
Turmeric powder – 1/4 teaspoon.
Cumin – 1/2 teaspoon.
Cinnamon.
Cloves.
Star anise.
Fennel seed.
Pepper.
Dried chilies – 3 nos.
Green chilies – 3nos.
Chili powder – 3 teaspoons.
Coriander powder – 2 teaspoons.
Oil.
Mustard.
Curry leaves
Method
*Cook soaked chickpeas with salt and turmeric.
*Slice onion, ginger, garlic, green chilies, and tomato.
*Remove cooked chickpeas from the flame and set aside a small portion to make a paste.
*Make a paste of cumin, ginger, and garlic.
*Make another paste of fennel seed, cinnamon, star anise, cloves (garam masala mix).
*Make a paste of tomato.
*Paste the portion of chickpeas.
*Heat a pan with oil, splutter mustard add dried chilies and onion. Followed by a paste of green chilies, ginger, garlic, and curry leaves. Mix the paste of garam masala and powdered cumin.
*Saute in chili powder, coriander powder, turmeric powder. When the raw smell is gone add in the tomato paste. Mix in the cooked chickpeas.
*Remove from the flame once cooked and serve
