Ingredients
- Chicken – 1 kg
- Onion – 3 nos
- Green chilli – 3 or 4 nos
- Garlic – 20 to 23 nos
- Ginger – 1 nos
- Red chilli powder – 1 1/2 tbsp
- Turmeric powder – 1/2 tbsp
- Coriander powder – 1 tbsp
- Dry red chilli – 4 to 5 not
- Cinnamon – 1 nos
- Cardamom – 2 to 3 nos
- Cloves – 2nos
- Fennel seed – 1 tsp
- Cumin seed – 1 tsp
- Mustard seed – 11 tsp
- Salt – 1 or 2 tbsp
- Oil – 3 to 4 tbsp
Method
- Take a pan add cleaned chicken pieces.
- Then add salt, red chilli powder, and turmeric powder.
- Combine them well with hands.
- cover and marinate for half an hour.
- Heat small amount of oil in a pan
- Saute the dry red chilies thoroughly.
- Then add fennel seed, cloves, cinnamon, and cumin seed.
- Saute them well for a few minutes.
- Then add coriander powder and saute them well.
- Remove from fire and set aside.
- The ginger and garlic should then be crushed and set aside.
- Now we have to crush roasted, dry red chilies into fine powder.
- Then add other roasted ingredients like coriander powder, fennel seed, etc. to the fine powder and set aside.
- In a pan, heat the oil,allow mustard seeds to sputter
- Then add the chopped onion and green chilli.
- Saute them well for a few minutes.
- Add the crushed ginger and garlic,saute them well.
- Sprinkle some salt and mix them well.
- Then add marinated chicken and mix them well.
- Then add some Roasted grounded masala and mix them well.
- Cover and cook till the chicken is well cooked.
- Remove the lid and saute the well.
- Again, add the grounded masala mix and curry leaves.
- combine them well.
- Then cover and cook for a few minutes.
- Remove from fire and set aside.
- Serve the tasty chicken roast with appam.
