Kerala style sardine in banana leaf

Ingredients

  • Banana leaf – 1 nos
  • Sardines – 10 nos
  • Salt – 3 tsp
  • Turmeric powder – 2 tsp
  • Red chilli powder- 1 1/2tbsp
  • Coriander powder -1 tbsp
  • Crushed masala paste – 3 to 4tsp
  • Coconut oil – 1 tsp
  • Grated coconut – 50g
  • Thick Coconut milk – 1/2 cup
  • Onion – 1 nos
  • Curry leaves
  • Green chillies – 2 nos
  • Tomato – 1 nos

Method

  • Today we’re going to prepare tasty sardines in banana leaf
  • For that first cut and clean the sardines
  • Then add salt , turmeric powder , chilli powder , coriander powder and crushed masala and oil in to sardines and mix it well with hands and keep it aside
  • Now take grated coconut squeeze it with hand and collect the coconut milk and keep it aside
  • Then heat oil in a frying pan and fry the marinated sardines remove from fire and keep it aside
  • Now peel and cut onion and keep it aside
  • Cut green chilies and keep aside
  • Now heat oil in another pan and saute the sliced onion and add crushed masala paste which has garlic, ginger, pepper , fennel seeds , then add curry leaves
  • Then add turmeric powder and red chilli powder and mix it well
  • Now add green chilli and tomato pieces in to it and saute well
  • Then remove pan from fire
  • Now keep the banana leaf on top of the stove and toast it slightly
  • Now spread some oil on the banana leaf and add the onion tomato mix and spread it
  • Then add the fried sardines on top of it
  • Add the coconut milk and curry leaves on top of it
  • Now cover the banana leaf and tie it
  • Then heat oil in a pan and fry this on both sides
  • Remove from fire
  • Then open it
  • Tasty sardine in banana leaf is ready to serve
