Ingredients
- Chicken pieces -1 kg
- Shallots -19 to 20 nos
- Garlic 9 to 10 nos
- Ginger -1 nos
- Curry leaves -2 to 3 sprigs.
- Rice flour 3 to 4 tbsp
- Red chilli powder -2 tbsp
- Dry red chilli flakes -2 tbsp
- Coriander powder -1 tbsp
- Garam masala -1 tbsp
- Turmeric powder -1/2 tbsp
- Vinegar -1 tbsp
- Fennel seeds -1 tbsp
- Salt -1 tbsp
- Oil -5 to 6 tbsp
Method
- First, we have to crush the shallots, garlic and ginger.
- Again, add curry leaves, fennel seed and cinnamon, grind them well, and set aside.
- Take a pan,add cleaned chicken pieces.
- Then add crushed shallots and fennel seeds masala mix
- Add red chilli powder, coriander powder, garam masala, turmeric powder and salt.
- Pour some vinegar and add rice flour.
- Mix them well and marinate for half an hour.
- Heat oil in a pan and add half a batch of marinated chicken pieces.
- Fry them well till they become light golden brown, drain and set aside.
- Again, add the next batch of marinated chicken pieces and fry them well.
- Drain and keep aside.
- Heat oil in a pan and add crushed garlic and masala mix.
- Then add some garlic and curry leaves and saute them well.
- Add dry red chilli flakes, saute and fry them well.
- Once it is fried, remove it from the heat and set it aside.
- Then add the fried ingredients to the top of the chicken fry
- Serve the tasty chicken fry with meals.
