Tharavu Curry Recipe | Spicy Duck Curry Recipe – Kerala Style
Ingredients
- Duck /Tharavu : 1 kg
- Turmeric Powder : 1/4 tsp
- Red Chilly Powder : 2 tbsp or to your spice level
- Coriander Powder : 2 btspShallots /Small Red Onions : 1/4 cup (finely,sliced)
- Dried Whole Red Chillies : 2-3 Broken into two pieces
- Mustard Seeds : 1 tsp
- Curry Leaves : few
- Green Chillies : 6 oor 7 or to your spice level (slit, lengthwise)
- pepper powder-1tbsp
- Onion : 2 large (finely, sliced)
- Small onion :6 or 7
- Ginger : 1 tbsp (chopped)
- Garlic : 1 tbsp (chopped)
- Semi Thick Coconut milk – 2 cups
- Garam masala powder : 3 tsp
- home made garam masala
- cinnamon : 1 inch stick
- cloves : 5
- cardamoms : 4 pods,
- star anise :2
- fennel seeds : 1/2 tsp
Method
- First we Cut the duck into medium sized pieces wash well and squeeze out the excess water
and drain it. - Then we prepare ginger garlic paste and keep a side
- Heat oil in a heavy-bottomed pan / cheena chatti at medium heat. Splutter mustard seeds
and ginger garlic paste, fry dried red chilies ,small onion,curry leaves,coconut pieces( thenga
kothu) and big onion until golden colour. - Add chilli powder,coriander powder,turmeric powder,pepper powder, and saute for couple
of minutes. - Then add duck pieces and mix well all ingredients
- Add 1 cup coconut milk. Mix well. The curry would be light brown. Continue cooking for
another 5 to 6 minutes, until the curry changes to a brown colour - Add the thick coconut milk (1st extract) and stir gently. Cover and cook for another 2 to 3
minutes - Then we finally add the garam masala and mix well and cook some minutes. Add salt to taste
- Cover and cook for some minutes and remove from the heat.
- Serve hot with rice or appam.. and enjoy
