Kerala Style Egg Curry Recipe

Ingredients

  • Egg – 4 nos
  • Onion – 3 nos
  • Tomato -2 nos
  • Green chilli – 3 or 4 nos
  • Ginger – 1 nos
  • Garlic – 9 or 10 nos
  • Dry red chilli – 4 nos
  • Red chilli powder -2 tbsp
  • Turmeric powder – 1 tbsp
  • Cumin seed powder – 1 tbsp
  • Fennel seed powder – 1 tbsp
  • Pepper powder – 1 tbsp
  • Mustard seed – 1 tsp
  • Salt – 1 or 2 tbsp
  • Oil – 2 or 3 tbsp

Method

  • Heat water in a pan add eggs and salt, boil them well.
  • Drain boiled eggs and put in a bowl filled with cold water .
  • Take a bowl add water and boil them well.
  • Then we have to crush ginger and garlic into smooth paste and keep aside.
  • Deshell the boiled eggs and keep aside.
  • Then remove the hot water from the fire and keep aside.
  • Heat oil in a pan add mustard seed ,let them splutter for a few seconds.
  • Add dry red chilli and crush ginger garlic paste, saute them well .
  • Then add chopped onion and green chilli ,saute for a few seconds.
  • Add curry leaves ,saute them well.
  • Sprinkle some salt and saute till onion become transluent .
  • Then add dry spices like red chilli powder and turmeric powder ,
  • Add cumin seed powder ,fennel seed powder and pepper powder .
  • saute until the raw smell of the spices completely disappears.
  • Then add chopped tomatoes and saute them well, till they become soften.
  • Add aqurate amount of water and salt ,stir them well and cook for 4 to 5 minutes.
  • Then add boiled eggs and mix them well.
  • Remove from fire and keep aside
  • Serve the tasty curry with Steamed rice cake or appam
