Ingredients
- Navara Red Rice – 2 cup
- Ajwain seed – 1 cup
- Black sesame seed – 1 cup
- Fenugreek seed – 1 cup
- Cumin seed – 1. 1/2 cup
- Cardamom – 4 to 5 nos
- Ginger powder – 2 tbsp
- Palm Jaggery – 250 gram
Method
- Firstly we have to measure the navara rice and set aside.
- Add water to the navara rice pan and rinse them well.
- Drain the water and set it aside.
- Heat a heavy-bottomed pan and add the cleaned navara rice.
- Saute and roast them well.
- Remove the navara rice from the hot pan and set it aside.
- Again, add ajwain seed to the hot pan.
- Saute and roast them well.
- Remove the ajwain seed from the pan and set it aside.
- Now add black sesame seeds and roast them well.
- Remove the sesame seeds from the hot pan and set them aside.
- Then add some fenugreek seeds and sauté them well.
- Remove from the hot pan and keep aside.
- Add some cumin seed and cardamom.
- Saute them well and set them aside.
- Heat a pan and add palm jaggery and water.
- Stir and boil them well.
- Once the jaggery is completely melted,
- Remove from the fire and set aside.
- Then drain the jaggery thick water and keep aside.
- Take a bowl and add grounded roasted navara rice powder.
- Then add crushed ajwain powder sesame powder, fenugreek seed powder
- Add crushed cumin seed , cardamom powder and dry ginger powder
- Then add grated coconut and jaggery water mix them well.
- Then take a small ball and roll it between your palms to make it round and smooth.
- Repeat the same step for all the marunnu Unda balls.
- Serve and enjoy the ayurvedic marunnu unda.
