Bitter gourd pickle

Ingredients

  • Bitter gourd – 2 nos.
  • Ginger – 2 nos.
  • Garlic – 3 nos.
  • Green chilies – 3 big.
  • Vinegar – 4 teaspoons.
  • Chili powder – 3 teaspoons.
  • Turmeric powder – 1/2 teaspoon.
  • Cumin powder – 1 teaspoon.
  • Hing powder – 1/2 teaspoon.
  • Tamarind paste – as required.
  • Jaggery – 1/2 teaspoon.
  • Salt – as required.
  • Sesame oil.
  • Mustard.
  • Curry leaves.

Method

  • Cut bitter gourd into small pieces lengthwise. To reduce bitterness marinate the bitter gourd with vinegar and salt and keep aside for half an hour.
  • Fry bitter gourd in sesame oil.
  • Heat oil in a wok and splutter mustard. Saute in finely chopped green chilies, garlic, ginger, and curry leaves. To the sauteed mixture add chili powder, turmeric powder, cumin powder.
  • Season with salt and add vinegar. Add tamarind paste, hing powder, and jaggery powder. Add the fried bitter gourd, mix well and remove from flame.
  • Bitter gourd pickle ready.
