Ingredients
- Ash gourd – as required.
- Salt – as required.
- Curd – as required.
- Grated coconut – as required.
- Green chilies – as required.
- Onion – as required.
- Cumin – as required.
- Garlic – as required.
- Curry leaves – as required.
- Coconut oil – as required.
- Mustard – as required.
- Dried chilies – as required.
- Fenugreek seeds – as required.
Method
- Deseed the ash gourd and cut it into small pieces.
- In a pot, mix cut ash gourd, onion, green chilies, and salt with little water and cook the ash gourd.
- Make a paste of grated coconut, onion, garlic, cumin, dried chilies, turmeric powder.
- Thinly slice onion and ginger.
- To the cooked ash gourd, add the prepared paste and bring it to a boil. Reduce flame and add well-beaten curd. Season salt. Remove from the flame before a boil.
- Heat oil in another pan, splutter mustard and fenugreek seeds. Add sliced onion, ginger, dried chilies, curry leaves. Pour the mix to the prepared ash gourd curd gravy.
- Ash gourd curd gravy is ready
