Ash gourd curd gravy


  • Ash gourd – as required.
  • Salt – as required.
  • Curd – as required.
  • Grated coconut – as required.
  • Green chilies – as required.
  • Onion – as required.
  • Cumin – as required.
  • Garlic – as required.
  • Curry leaves – as required.
  • Coconut oil – as required.
  • Mustard – as required.
  • Dried chilies – as required.
  • Fenugreek seeds – as required.


  • Deseed the ash gourd and cut it into small pieces.
  • In a pot, mix cut ash gourd, onion, green chilies, and salt with little water and cook the ash gourd.
  • Make a paste of grated coconut, onion, garlic, cumin, dried chilies, turmeric powder.
  • Thinly slice onion and ginger.
  • To the cooked ash gourd, add the prepared paste and bring it to a boil. Reduce flame and add well-beaten curd. Season salt. Remove from the flame before a boil.
  • Heat oil in another pan, splutter mustard and fenugreek seeds. Add sliced onion, ginger, dried chilies, curry leaves. Pour the mix to the prepared ash gourd curd gravy.
  • Ash gourd curd gravy is ready
