Kerala style lunch – veg chattichoru

Ingredients

  • Rice – 1 cup

Method 

  • Rice : 1 cup
  • Keep a rice pot in stove and boil water in it
  • Now wash the rice and put in the rice pot and cook it

Dal curry

Ingredients

  • Onion – 3nos
  • Tomatoes – 2 nos
  • Green chilies – 3 nos
  • Shallots – 7 to 8 nos
  • Moong dal – 1/2 cup
  • Salt – 1 tsp
  • Curry leaves
  • Turmeric powder – 1 tsp
  • Red chilli powder – 2 tsp
  • Dried green chilli- 4 nos
  • Asafoetida powder- 1/2 tsp
  • Oil – 1 tbsp

Method 

  • Peel onions and shallots
  • Then keep it aside
  • Now wash onions , tomatoes, green chillies, and keep it aside
  • Then wash the moong dal and put sliced onions, tomatoes and green chillies in it
  • Add curry leaves, turmeric powder, red chilli powder and salt and add some water and keep it in the stove and cook
  • Then add some asafoetida powder and mix
  • Remove from fire if it is cookedand keep aside
  • By that time chop shallots and cut dried red chilli and keep aside
  • Then heat oil in a pan and add mustard seeds
  • Then add shallots ,dried red chilli and curry leaves, saute it well
  • Now remove from fire and add this to the cooked dal
  • Daal curry is ready

Potato mezukkuvaratti 

Ingredients

  • Potato – 3 nos
  • Garlic – 10 to 12 nos
  • Green chilies – 3 nos
  • Oil – 1 tbsp
  • Mustard – 1 tsp
  • Turmeric powder – 1 tsp
  • Red chilli powder – 1 tsp
  • Salt – 1 tsp
  • Pepper powder – 1 tsp

Method 

  • Peel potatoes and slice it
  • Wash it thoroughly and keep aside
  • Then peel garlic and wash it
  • Then wash and cut green chilies and keep aside
  • Now chop the garlic
  • Then heat oil in a pan and add mustard seeds , garlic and green chilies in it
  • Then add the sliced potatoes and mix well
  • Then add turmeric powder , red chilli powder , salt and mix
  • Then add pepper powder
  • Stir it well and close the pan and cook foe few minutes
  • Open the pan and stir and fry it well
  • Then remove from fire and keep it aside

Long beans / payar thoran

Ingredients 

  • Long beans – 1/2 kg
  • Onion – 3 nos
  • Green chilies – 4 nos
  • Grated coconut – 30g
  • Oil – 2 tsp
  • Dried green chilies – 4 nos
  • Mustard – 1 tsp
  • Curry leaves
  • Salt – 1 tsp

Method 

  • Wash and cut the ends of long beans and keep it aside
  • Then peel onions and wash it
  • Wash green chillies
  • Now cut the long beans in to tiny pieces
  • Then chop onions in to tiny piece
  • Then cut green chillies in to tiny pieces and keep aside
  • Now grate coconut
  • Then heat oil in a pan and add mustard seeds , dried red chillies and curry leaves
  • Saute it and add the long beans in to it and stir well and close the pan
  • When it is half cooked open the pan
  • Then make some space in the middle of the pan and add grated coconut and cover with the beans , do not mix it now
  • Cover the pan for few minutes and then open it and stir it well
  • Now remove pan from fire

Boiled tapioca / kappa puzuk

Ingredients 

  • Tapioca – 1 kg
  • Garlic – 7 nos
  • Green chilies – 4 nos
  • Turmeric powder – 1 tsp
  • Curry leaves
  • Cumin seeds – 1tsp

Method 

  • Peel the tapioca and slice it in to thin pieces
  • Then wash it and keep aside
  • Then boil water in a pot and add this washed tapioca and cook it
  • Then make a paste of garlic , green chilli , cumin seeds , curry leaves , and turmeric powder in a grinding stone and keep it aside
  • Then drain all the water from the tapioca and add this paste in to it and add salt
  • Then cook fir a few minutes by covering the pot and mix it with a thudip ( stick used for mixing boiled tapioca)
  • Now remove from fire and keep it aside

Pulisheri / curd curry

Ingredients

  • Curd – 1 cup
  • Oil – 1 tbsp
  • Mustard seeds – 1 tsp
  • Fenugreek seeds – 1 tsp
  • Cumin seeds – 1 tsp
  • Shallots – 7-8 nos
  • Garlic – 5-6 nos
  • Ginger – 1 piece
  • Dried red chilli – 2-3 nos
  • Green chilli – 2 nos
  • Curry leaves
  • Turmeric powder – 1 tsp
  • Asafoetida powder – 1/2 tsp
  • Salt – 2 tsp

Method 

  • Heat oil in a pan and add mustard seeds , fenugreek seeds , cumin seeds , sliced shallots , ginger, garlic , green chillies , dried red chillies
  • Then saute it well and add curry leaves and stir it
  • Then add turmeric powder and mix well
  • Then add the curd and mix it then add asafoetida powder and salt
  • Mix it and remove from fire

Chammanthi

Ingredients

  • Dried red chilli – 2 nos
  • Ginger – 1 piece
  • Tamarind – a pinch
  • Grated coconut – 30g
  • Shallots- 4 nos
  • Curry leaves

Method

  • Grind dried red chilli, ginger, tamarind, grated coconut, curry leaves and shallots in the grinding stone one by one and grind again altogether and keep it aside in a bowl
  • Now prepare chattichoru
  • Now take a chatti and place a round shaped banana leaf
  • Then take rice
  • Then take some boiled tapioca
  • Then some potato mezukuvaratti
  • Then take some long beans thoran
  • Then some chammanthi
  • Then some dal curry in the middle
  • And lastly add pulisheri to the tapioca
  • Tasty kerala style lunch – veg chattichoru is ready
