Fish curry
Ingredients
*Tuna – 1kg.
*Tomato – 1 no.
*Ginger – 2 big pieces.
*Garlic – 10 cloves.
*Green chilies – 3 nos.
*Curry leaves.
*Oil.
*Mustard.
*Fenugreek powder -3/4 teaspoon.
*Chilli powder – 7 teaspoons.
*Tumeric powder – 3/4 teaspoon.
*Salt to taste.
Method
1) Clean the fish with salt and tamarind infused water.
2) Crush ginger and garlic.
3) Heat a pot with oil, splutter mustard, saute ginger, garlic, chilies, curry leaves, chili powder, turmeric powder, fenugreek powder, tomato, and salt as required.
4) Add water after all the ingredients above are cooked. Once the water comes to boil add the fish and cover the pot and cook. When the curry comes to boil remove it from flame.
Tasty fish curry ready.
Sardine fry
Ingredients
*Sardines – 6 nos.
*Ginger – big piece.
*Pepper – 1 and 1/2 teaspoons.
*Coriander – 1 teaspoon.
*Turmeric powder – 1/2 teaspoon.
*Salt as required.
*Oil.
Method
1) Clean the fish properly with salt and tamarind.
2) Make a paste with ginger, garlic, pepper, and salt.
3) Add chili powder, coriander powder, and turmeric to the paste.
4) Rub the paste into the paste.
5) Fry the fish.
Tasty fish fry is ready.
Moringa thoran
Ingredients
*Moringa leaves.
*Grated coconut half portion.
*Chili powder -3/4 teaspoon.
*Turmeric powder – 1/4 teaspoon.
*Shallots – 12 nos.
*Salt to taste.
*Oil.
*Mustard seeds.
Method
1) Clean moringa leaves.
2) In a pan heated with oil splutter mustard. Saute in sliced shallots to this add the moringa leaves.
3) Rub in chili powder, turmeric powder to the shredded coconut.
4) Add the flavored shredded coconut to the pan and saute till it cooked completely.
Sauteed potato
Ingredients
*Potato – 3 nos.
*Oil.
*Chili powder -1 and 1/2 teaspoon.
*Turmeric powder – 1/2 teaspoon.
*Salt.
*Curry leaves.
Method
1) Clean potato and cut it into cubes. To a hot pan add oil and saute in the potato and salt.
2) Add chili powder, turmeric powder, and curry leave to the potato and saute well.
3) Once cooked take it off the flame.
Seasoned buttermilk / Moru curry
Ingredients
*Curd – 1 packet.
*Oil.
*Turmeric powder-1/2 teaspoon.
*Shallots – 5 nos.
*Dried chilies – 4 nos.
*Green chilies – 3 nos.
*Ginger – small piece.
*Garlic -10 cloves.
*Fenugreek powder – 1/2 teaspoon.
*Curry leaves.
*Salt.
Method
1) Heat oil in a hot pan and splutter mustard.
2)Saute in shallots, garlic, ginger, green chilies, dried chilies, turmeric, and curry leaves. Add in fenugreek powder.
3) Add the buttermilk, remove the pan from flame before it boils.
Chutney
Ingredients
*Shredded coconut – 1/2 portion.
*Dried chilies – 7 nos.
*Shallots – 4 nos.
*Salt.
*Ginger -small piece.
*Tamarind – small piece.
*Curry leaves.
Method
1) Grill dried chilies on coal flame.
2)Grind coconut, shallots, ginger, tamarind, salt, dried chilies, curry leaves.
3) Keep it aside.
Fry papad in oil.
Serve all the prepared dishes with rice.
