Ingredients
- Egg – 4 nos
- Onion – 3 nos
- Tomato -2 nos
- Green chilli – 3 or 4 nos
- Ginger – 1 nos
- Garlic – 9 or 10 nos
- Dry red chilli – 4 nos
- Red chilli powder -2 tbsp
- Turmeric powder – 1 tbsp
- Cumin seed powder – 1 tbsp
- Fennel seed powder – 1 tbsp
- Pepper powder – 1 tbsp
- Mustard seed – 1 tsp
- Salt – 1 or 2 tbsp
- Oil – 2 or 3 tbsp
Method
- Heat water in a pan add eggs and salt, boil them well.
- Drain boiled eggs and put in a bowl filled with cold water .
- Take a bowl add water and boil them well.
- Then we have to crush ginger and garlic into smooth paste and keep aside.
- Deshell the boiled eggs and keep aside.
- Then remove the hot water from the fire and keep aside.
- Heat oil in a pan add mustard seed ,let them splutter for a few seconds.
- Add dry red chilli and crush ginger garlic paste, saute them well .
- Then add chopped onion and green chilli ,saute for a few seconds.
- Add curry leaves ,saute them well.
- Sprinkle some salt and saute till onion become transluent .
- Then add dry spices like red chilli powder and turmeric powder ,
- Add cumin seed powder ,fennel seed powder and pepper powder .
- saute until the raw smell of the spices completely disappears.
- Then add chopped tomatoes and saute them well, till they become soften.
- Add aqurate amount of water and salt ,stir them well and cook for 4 to 5 minutes.
- Then add boiled eggs and mix them well.
- Remove from fire and keep aside
- Serve the tasty curry with Steamed rice cake or appam
