Kerala style pepper chicken masala

Chicken – 2 Kg (cleaned and washed in turmeric water)
Onion – 7 to 8 (finely sliced)
Shallot – 6 to 7 (finely sliced)
Green chili – 5 (split into 2 half)
Dry red chili – 4
Ginger garlic smashed – 3 Tsp
Mustard seeds – ½ Tsp
Cinnamon – 6 small pieces
Cloves – 2 to 4
Star anise – 2
Curry leaf – 3 to 4 sprig
Turmeric powder – ½ Tsp
Chili powder – 1 tsp
Coriander Powder – 1 ½ tsp
Fennel Powder – 1 tsp
Black pepper powder – 4 tsp
Garam masala powder – 1 tsp
Oil – ½ Kg
Salt for taste
Water as required
* Firstly, in a pan heat the oil, then add mustard seeds, sliced onion, shallot and green chilly mix it well and
then add the dry red chili and mix it well
* To the mix add cinnamon, cloves, and star anise, ginger garlic and curry leaf then add salt for taste and
blend it well
* Now add the curry powders to it. First add ½ tsp turmeric powder, 1 tsp chili powder, 1 ½ tsp coriander
powder, 1 tsp fennel powder, 2 tsp black pepper powder and 1 tsp of garam masala powder and sauté it

* Add chicken to the mix and blend it well, then add some water and leave it until the chicken is properly
cooked, in between add some more black pepper powder and blend it.
* Now Pepper chicken masala is ready to serve and enjoy
