Ingredients
- Sardines- 1kg
- Red chilli powder – 1 tbsp
- Pepper powder- 1 1/2 tsp
- Turmeric powder- 1 tsp
- Salt – 1 tsp
- Onion- 3 nos
- Tomatoes- 3 nos
- Green chilli- 2 nos
- Ginger-2 pieces
- Garlic – 7 to 8 nos
- Curry leaves
Method
- Clean and wash sardines and set it aside
- Add red chilli powder, pepper powder , turmeric powder and salt
- Marinate it and set it aside
- Now peel onion and set it aside
- Wash tomatoes, green chillies and onion
- Then peel ginger and garlic and wash it
- Now chop onion and green chilli and keep it aside
- Then chop tomatoes in to tiny pieces and keep aside
- Heat oil in a frying pan and fry the marinated sardines
- And keep it aside after frying
- Now grind the ginger and garlic in a grinding stone and keep aside
- Now heat oil in a pan and add sliced onion
- Then add green chilli and curry leaves and add ginger garlic paste
- Saute it well till it turns brown
- Now add red chilli powder turmeric powder pepper powder and salt according to taste
- Then add tomatoes and mix it well
- Now add the fried sardines to this masala and mix it well
- Once the fish roast is ready
- Remove from fire and set aside
- Serve the tasty Kerala style sardine fish roast / fried mathi roast
