Peri Peri Chicken Rice Recipe

Ingredients

  • Basmati rice – 1 kg
  • Chicken -1 kg
  • Carrot -1
  • Chopped onion – 3nos
  • Tomato -2 nos
  • Lemon juice -1/2 lemon
  • Potato – 1 nos
  • Capsicum – 1 nos
  • coriander leaves – one hand full
  • mint leaf – 1 hand full
  • Fennel powder- 1 tbsp
  • Dry red chilli-3 or 4 nos
  • Coriander seed -1 tbsp
  • Black pepper – 1 tbsp
  • Cumin seed – 1/21 tbsp
  • Fennel seed – 1 tbsp
  • Turmeric powder – 1 tbsp
  • Green chilli – 2 nos
  • Ginger – 1 medium
  • Garlic- 5 or 6 nos
  • Cashew nut – 250 grm
  • Raisins – 250 grm
  • Cinnamon -1
  • Cloves- 3 or 4
  • ghee – 2 tbsp
  • oil- for cooking

Method

  • Heat oil in pan add dry red chilli ,black pepper, coriander seed, cumin seed, fennel seed and heat
    well and keep aside.
  • Then we have to crush the heated ingredients like dry red chilli ,coriander seed ,black pepper and
    fennel seed into powder and set aside .
  • Again we have to grind green chilli, ginger and garlic into fine paste and set aside
  • Now we have to clean and cut the chicken into pieces and set a side
  • Then we take a large bowl add cleaned chicken pieces, salt, turmeric powder, crushed powder ( dried
    red chilli, black pepper ,coriander seed etc ..)ginger ,garlic and green chilli paste then mix well.
  • Then we add 1 tbsp of coconut oil and mix well and marinated for 10 to 15 minutes.
  • Heat oil in a pan add marinated chicken pieces and fry well ,drain and set asided.
  • Then we wash and clean the basmati rice and drain and set a side.
  • Heat ghee in a large pan add cashew nut and raisins fry well and set a side.
  • Then we add chopped carrot in to the pan and fry well , drain and set a side.
  • Again we add oil in the same pan add chopped onion and saute well .
  • Then we add masalas like cinnamon, cloves,etc.. and saute well.
  • Add chopped tomatoes saute till they become soft.
  • Then we add green chilli, fennel seed powder, water and salt mix well
  • Again we have to squeeze half lemon in to the pan
  • Add chopped potato and capsicum mix ,cover and cook for 5 to 6 minutes.
  • Then we have to add 2 tbsp of ghee and basmati rice ,cover and cook well.
  • After the rice is ready we have to add fried chicken pieces, fried carrot ,fried cashew and raisins .
  • Finally we sprinkle some chopped coriander leaf and mint leaves
  • Remove from heat and keep aside.
