Ingredients for batter
- Rice – 2 cup
- Urud dal – 1 cup
- Salt -1 or 2 tsp
- Water – 1 or 2 cups
Ingredients for sambar
- Toor dal – 1 cup
- Ash gourd -1/2
- Drum stick -2 nos
- Pumpkin -1/2 pieces
- Raw tomatoes-2 nos
- Beans- 6 or 7 nos
- Carrot-2 nos
- Raw banana-1 nos
- Brinjal-2 nos
- Potatoes-1 nos
- Onion – 3 nos
- shallots – 7 or 8 nos
- curry leaves – 3 sprigs
- Green chilli – 3 nos
- Grated coconut – 1 cup
- Asafoetida -small pieces
- Coriander seed – 2 tbsp
- Dry red chilli – 7 or 8 nos
- Fenugreek seed – 1 tsp
- Tamarind – small ball
- Mustard seed – 1 tsp
- Oil – 3 or 4 tbsp
- Salt – 1 or 2 tsp
Method
- Take a bowl add raw rice and water ,wash them well, drain and again rewash the ingredients ,set aside.
- Then we have to take another bowl add urud dal and water ,wash them well drain and keep aside.
- Now we have to soak the two ingredients like raw rice and urud dal separately for three hours ,set aside.
- After three hours drain the excess water for the soaked ingredients and ,keep aside.
- Then blend the soaked raw rice and urud dal with stone grinder into frothy thick smooth batter and set aside until four hours for fermentation process.
- Now we take a idli steamer add water and boil for some minutes.
- Then place the idli plates and pour the smooth batter ,cover and cook for 8 to 9 minutes.
- Ones done turn off the flame and remove the idli plates from the steamer and sprinkle some water on the top of the plates for cool down .
- Take a spatula and remove the idlis to the plate .
- Serve and enjoy the idli with hot sambar .
Method
- Firstly we have to peel and cut the whole vegetables like ash gourd, pumpkin, raw banana ,tomatoes, brinjal potatoes etc..
then wash and keep aside. - Heat oil in a pan add asafoetida pieces and fry them well, drain and set aside.
- Again add coriander seed, dry red chilli, fenugreek seed and grated coconut into the hot oil pan and roasted them well, keep aside.
- Now take a pan add chopped shallots ,onion, green chilli, whole vegetables, cleaned toor dal ,boiled water and salt ,cook them well till the vegetables become soften.
- Grind the roasted ingredients like grated coconut, coriander seed, dry red chillies ect.. into very fine paste and transfer into a bowl.
- Then add some water into the grated coconut mix bowl and mix them well .
- Then pour the mixture into the vegetable cooking pan and mix them well.
- Add soaked tamarind water and mix them well and cook for 4 to 5 minutes.
- Remove from fire and keep aside.
- Heat oil in a pan add mustard seed ,lets them cracked .
- Add dry red chilli curry leaves and fry them well.
- Then pour the mixture into the sambar curry pan and mix them well.
- Serve the tasty south Indian sambar with soft and fluffy idli.
