Tasty Kerala Style Egg Biriyani

Ingredients

  • Basmati rice – 1 kg
  • Egg – 6 nos
  • Onion – 9 nos
  • Tomatoes -2 nos
  • Garlic -9 to 10 nos
  • Ginger – 1 nos
  • Green chilli – 2 or 3 nos
  • Star anise – 1 or 2 nos
  • Cloves – 3 to 4 nos
  • Cardamom – 2 or 3 nos
  • Pepper seed – 1 or 2 tsp
  • Cinnamon – 1 nos
  • Bay leaves – 1 or 2 nos
  • Fennel seed – 1 tsp
  • Ghee – 2 to 3 tbsp

Method

  • Take a pan, add basmati rice and water.
  • soaked for some time and set aside.
  • Heat water in a pan.
  • cover and boil them well.
  • Remove the lid from the hot water pan.
  • Then add some spices like star anise and cloves.
  • Then add cardamom,pepper seed,cinnamon,bay leaves, and fennel seed.
  • cover and boil them well.
  • Then crush green chilli, ginger and garlic
  • Again add coriander leaves and grind them whole. Keep them aside.
  • Drain the soaked rice and keep aside.
  • Then rewash the rice two to three times.
  • Drain and set aside.
  • Then add soaked basmati rice and ghee to the hot water pan.
  • Cover and cook them well.
  • Drain excess water and set aside after cooking.
  • Heat ghee in a pan ,add the final chopped onion and salt.
  • Sauté till they become a light golden brown.
  • Then add cashew nut and raisins.
  • Saute and fry them well
  • Drain and keep aside.
  • Heat oil in a pan ,add chopped onion,saute them well.
  • Add crushed greenchilli, ginger, garlic and coriander leaves mix
  • Sauté them well for a few minutes.
  • Add curry powders like coriander powder,turmeric powder and garam masala .
  • Saute them well for few minutes.
  • Then add chopped tomatoes and saute till they become soft.
  • Then pour some water and combine them well.
  • Saute and cook them well.
  • Then add boiled egg and mix them well.
  • Then add cooked basmati rice and combine them well.
  • On the top, add some fried cashew nuts, raisins, and onion
  • Finally sprinkle some chopped coriander leaves on the top
  • Cover and cook for two to three minutes.
  • Remove from heat and set aside.
  • Serve the tasty Egg Biriyani with pickles and salads.
