Kerala Traditional Recipe | Turmeric Leaf Ada – Manjal Ila Ada

Ingredients

  • Rice flour – 1 cup
  • Banana – 2 nos
  • Jaggery – 250 gram
  • Grated coconut – 1 cup
  • Crush cardamom – 1 tbsp
  • Salt – 1 or 2 tsp

Method

  • In a pan, add grated jaggery and water.
  • Boil them well till the jaggery is completely melted.
  • Remove them from the fire and strain them well.
  • In a bowl, add rice flour, salt and crushed cardamom powder. Combine them well.
  • Add the required amount of water little by little to the rice flour and mix thoroughly with a wooden spatula.
  • When it is warm enough to handle, knead it with your hands until the dough becomes soft. Keep it aside.
  • Then peeled the banana and chopped it into thin slices.
  • Heat a pan and add grated coconut and stained jaggery.
  • Stir them well till the jaggary water is completely absorbed by the grated coconut.
  • Now add the crushed cardamom and stir them well.
  • Then add the chopped bananas and stir them well.
  • Then cook for a few minutes,remove from the fire, and set aside.
  • Heat water in a steamer and place an idli steamer in it.
  • Then take a turmeric leaf and cut it in half.
  • Wash them well with water and set them aside.
  • Take a lemon-sized piece of dough and flatten it over a turmeric leaf with your fingers.
  • Then place a small amount of jaggery-banana mix on top and spread it.
  • Again, fold in half lengthwise and press gently on the sides.
  • Then place the turmeric leaf ada on the steamer and cook for 10 to 15 minutes.
  • Once it is well cooked, remove the turmeric ada from the steamer and cool it well.
  • Serve and enjoy the turmeric leaf ada with coffee or tea.
