Ingredients
- Egg – 8 nos
- Shallots – 7 or 8 nos
- Drumstick – 2 or 3 nos
- Potatoes – 2 nos
- Tomato – 1 nos
- Green chilli – 2 to 3 nos
- Curry leaves – 3 to 4 sprigs
- Grated coconut – 1 cup
- Turmeric powder – 1 tsp
- Dry red chilli – 2 nos
- Cumin seed – 1 tsp
- Fennel seed – 1 tsp
- Salt – 1 or 2 tsp
- Oil- 2 to 3 tbsp
Method
- Heat water in a pan and add salt and eggs.
- Boil them well.
- Drain the boiled eggs and put them in a bowl filled with cold water.
- Take a pan. Add a drumstick, chopped potato, tomato, green chili and curry leaves.
- Now add some turmeric powder, salt and water.
- Then place the vegetable mix pan on fire.
- Cover and cook until it becomes soft.
- Then we have to grind dry red chillies, turmeric powder, cumin seed and fennel seed into a smooth paste.
- Again, add the grated coconut and shallots and grind them well to make a coarse paste. Set aside.
- Remove the lid and check whether the drumstick and other vegetables are almost done or not.
- Deshell the boiled eggs and keep them aside.
- Slice the eggs in half and set aside.
- The ground coconut mixture must now be added to the vegetable cooking pan.
- Combine them and cook them well.
- Add some coconut oil and curry leaves and mix them well.
- Now add boiled egg slices and mix them properly.
- Cover and cook for 4 to 5 minutes.
- Take the pan off the heat and set it aside.
- Serve the tasty egg aviyal with meals.
