Chicken Biriyani

Ingredients

  • Basmati rice – 1 kg
  • Onion – 8 nos
  • Tomato – 4 nos
  • Ginger – 1 nos
  • Garlic – 8 to 9 nos
  • Green chilli – 3 to 4 nos
  • Coriander leaves – one hand full
  • Lemon juice – 1/2 slice
  • Curd – 1/2 cup
  • Cashew nut – 12 to 14 nos
  • Turmeric powder – 1/2 tbsp
  • Garam masala – 1 tbsp
  • Raisins – 10 to 12 nos
  • Cinnamon – 1 nos
  • Cardamom – 3 to 4 nos
  • Pepper seed – 1 tsp
  • Ghee – 4 to 5 tbsp
  • Oil – 1or 2 tbs
  • Salt – 1 or 2 tsp

Method

  • Take a bowl, add basmati rice and add water.
  • Soak for half an hour.
  • Then wash the soaked basmati rice two to three times,
  • set aside after draining.
  • Heat oil and ghee in a pan.
  • Then add cinnamon, cardamom and pepper seed.
  • Add the chopped onion and saute them well.
  • Take the pan off the heat and set it aside.
  • Then place a mud pot on heat.
  • Then add sauted onions and soaked basmati rice.
  • combine them well.
  • Pour a sufficient amount of water and salt ,mix them well
  • Cover and cook them well.
  • Then we have to crush the ginger and garlic and set them aside.
  • Then crush the green chilli and set it aside.
  • Remove the lid and check whether the rice is well cooked or not.
  • Once it is well cooked, remove it from the fire and set it aside.
  • In a heavy-bottomed pan, heat the oil.
  • Add the cashew nuts and fry them well.
  • Drain well and set aside.
  • Add raisins and fry them well and Set aside after draining
  • Now add the final chopped onion and salt.
  • Saute them until they become a light golden brown.
  • Drain well and set aside.
  • Again, add cinnamon, cloves and cinnamon.
  • Then add the chopped onion and saute them well.
  • Then add turmeric powder and garam masala, saute them well.
  • Then add chopped tomatoes and saute them well.
  • Add crushed ginger,garlic and green chilli, saute them well.
  • Then add the cleaned chicken pieces and mix them well.
  • Then drizzle with lemon juice and curd.
  • Mix them well.
  • Cover and cook until the chicken is well cooked.
  • Remove the lid and check whether the chicken is well cooked or not.
  • Once the chicken is well cooked, remove it from the heat and set it aside.
  • Take a pan add cooked chicken masala .
  • Then next layer we will add cooked basmati rice
  • on the top springle some fried onion and coriander leaves
  • Then add some fried cashew-nut and raisins
  • Then next layer we will add cooked basmati rice .
  • Finally we Springled fried onion ,coriander leaves, cashewnut and raisins
  • Cover the pan with the dough and seal it.
  • cover and cook for 6 to 7 minutes .
  • Then open the dum and set it aside.
  • Serve the tasty dum chicken biriyani with salads.
