Easy Egg Aviyal

Ingredients

  • Egg – 8 nos
  • Shallots – 7 or 8 nos
  • Drumstick – 2 or 3 nos
  • Potatoes – 2 nos
  • Tomato – 1 nos
  • Green chilli – 2 to 3 nos
  • Curry leaves – 3 to 4 sprigs
  • Grated coconut – 1 cup
  • Turmeric powder – 1 tsp
  • Dry red chilli – 2 nos
  • Cumin seed – 1 tsp
  • Fennel seed – 1 tsp
  • Salt – 1 or 2 tsp
  • Oil- 2 to 3 tbsp

Method

  • Heat water in a pan and add salt and eggs.
  • Boil them well.
  • Drain the boiled eggs and put them in a bowl filled with cold water.
  • Take a pan. Add a drumstick, chopped potato, tomato, green chili and curry leaves.
  • Now add some turmeric powder, salt and water.
  • Then place the vegetable mix pan on fire.
  • Cover and cook until it becomes soft.
  • Then we have to grind dry red chillies, turmeric powder, cumin seed and fennel seed into a smooth paste.
  • Again, add the grated coconut and shallots and grind them well to make a coarse paste. Set aside.
  • Remove the lid and check whether the drumstick and other vegetables are almost done or not.
  • Deshell the boiled eggs and keep them aside.
  • Slice the eggs in half and set aside.
  • The ground coconut mixture must now be added to the vegetable cooking pan.
  • Combine them and cook them well.
  • Add some coconut oil and curry leaves and mix them well.
  • Now add boiled egg slices and mix them properly.
  • Cover and cook for 4 to 5 minutes.
  • Take the pan off the heat and set it aside.
  • Serve the tasty egg aviyal with meals.
