Ingredients
*Ash gourd – 1 no.
*Green chilies – 3 nos.
*Shallots – 10 – 15 nos.
*Curry leaves – 2 stems.
*Chili powder – 1 tablespoon.
*Turmeric powder – 1 tablespoon.
*Fenugreek powder – 1 tablespoon.
*Garlic – 4-5 cloves.
*Cumin – 1 tablespoon.
*Grated coconut – 1 cup.
*Coconut oil – 4 tablespoons.
*Mustard – 1 tablespoon.
*Water – 1 cup.
*Salt as required.
Method
1 Peel and clean ash gourd and chop to small pieces.
2 Clean and chop shallots and green chilies.
3 Cook the ash gourd with shallots, green chilies, curry leaves, salt, and 1 cup of water.
4 Make a paste of grated coconut, cumin, garlic, and shallots. Mix the paste to the ash gourd, cover, and cook.
5 For tempering, heat oil in a wok, splutter mustard. Saute in thinly sliced shallots, curry leaves, chili powder, fenugreek powder. Pour the tempering over the ash gourd curry.
