Ingredients
- Chicken – 1 kg
- Onion – 3 nos
- Garlic – 19 to 20 nos
- Ginger – 1 nos
- Green chilli – 2 to 3 nos
- Curry leaves – 2 or 3 sprigs
- Potatoes – 1nos
- Carrot – 2nos
- Grated coconut – 1 cup
- Pepper powder – 1 tbsp
- Garam masala – 1 /2 tbsp
- Salt – 1 or 2 tsp
- Oil – 2 or 3 tbsp
Method
- To begin, place cleaned chicken pieces in a pan.
- Then add the crushed pepper powder and salt.
- Pour a small amount of water,combine them well.
- Then place the chicken mix pan on the heat.
- Cover and cook until the chicken is well cooked.
- Remove the lid and check whether the chicken is well cooked or not.
- Once the chicken is well cooked, remove it from the fire and set it aside.
- Take a bowl, add grated coconut and water.
- Squeeze them well between your fingers.
- Drain the fresh coconut milk and set it aside.
- Again, add water to the squeezed coconut mix,
- Squeezed them well and drain the thin coconut milk and set it aside.
- Heat the oil in a pan and add the cinnamon and cardamom.
- Then add the dry red chilies and thoroughly saute them.
- Add chopped garlic ,ginger and curry leaves.
- Saute them well for a few minutes.
- Add chopped onion and saute them well.
- Then season with salt and saute the onions until they are translucent.
- Then add the cooked chicken mix.
- Add chopped carrot and chopped potato.
- Combine them thoroughly.
- Now add the thin coconut milk and thoroughly combine.
- cover and cook them well until the vegetables are well cooked.
- Remove the lid and mix them well.
- Again, add fresh coconut milk and mix them well.
- Add some curry powders, like pepper powder and garam masala.
- Mix them well for few minutes
- Add chopped green chilli and curry leaves.
- Mix them well and cook for 5 to 6 minutes.
- Take the pan off the heat and set it aside.
- Serve the tasty chicken stew with appam.
Appam preparation :
- Then add salt to the fermented batter bowl and mix them well.
- Heat the appachatty on a medium flame.
- Grease the appachetty with a little oil.
- Pour a ladle full of batter into the appachatty
- Then lift the pan from the heat
- Then slightly twist it around to spread the batter in the pan into a circular shape.
- Cook on low heat with a lid until the edges are golden brown.
- Remove the appam from the appachatty and place it on a plate.
- Then repeat the same process for the balance of the batter.
- Serve the tasty appam with chicken stew.
