Appam & Chicken Stew Recipe

Ingredients

  • Chicken – 1 kg
  • Onion – 3 nos
  • Garlic – 19 to 20 nos
  • Ginger – 1 nos
  • Green chilli – 2 to 3 nos
  • Curry leaves – 2 or 3 sprigs
  • Potatoes – 1nos
  • Carrot – 2nos
  • Grated coconut – 1 cup
  • Pepper powder – 1 tbsp
  • Garam masala – 1 /2 tbsp
  • Salt – 1 or 2 tsp
  • Oil – 2 or 3 tbsp

Method

  • To begin, place cleaned chicken pieces in a pan.
  • Then add the crushed pepper powder and salt.
  • Pour a small amount of water,combine them well.
  • Then place the chicken mix pan on the heat.
  • Cover and cook until the chicken is well cooked.
  • Remove the lid and check whether the chicken is well cooked or not.
  • Once the chicken is well cooked, remove it from the fire and set it aside.
  • Take a bowl, add grated coconut and water.
  • Squeeze them well between your fingers.
  • Drain the fresh coconut milk and set it aside.
  • Again, add water to the squeezed coconut mix,
  • Squeezed them well and drain the thin coconut milk and set it aside.
  • Heat the oil in a pan and add the cinnamon and cardamom.
  • Then add the dry red chilies and thoroughly saute them.
  • Add chopped garlic ,ginger and curry leaves.
  • Saute them well for a few minutes.
  • Add chopped onion and saute them well.
  • Then season with salt and saute the onions until they are translucent.
  • Then add the cooked chicken mix.
  • Add chopped carrot and chopped potato.
  • Combine them thoroughly.
  • Now add the thin coconut milk and thoroughly combine.
  • cover and cook them well until the vegetables are well cooked.
  • Remove the lid and mix them well.
  • Again, add fresh coconut milk and mix them well.
  • Add some curry powders, like pepper powder and garam masala.
  • Mix them well for few minutes
  • Add chopped green chilli and curry leaves.
  • Mix them well and cook for 5 to 6 minutes.
  • Take the pan off the heat and set it aside.
  • Serve the tasty chicken stew with appam.

Appam preparation :

  • Then add salt to the fermented batter bowl and mix them well.
  • Heat the appachatty on a medium flame.
  • Grease the appachetty with a little oil.
  • Pour a ladle full of batter into the appachatty
  • Then lift the pan from the heat
  • Then slightly twist it around to spread the batter in the pan into a circular shape.
  • Cook on low heat with a lid until the edges are golden brown.
  • Remove the appam from the appachatty and place it on a plate.
  • Then repeat the same process for the balance of the batter.
  • Serve the tasty appam with chicken stew.
