Ingredients
- Rice – 2 cups
- Cashew nut – 250 grms
- Jaggery – 1 cup
- grated coconut – 1 1/2 cup
- Cardamom – 5 to 6 nos
- Dry ginger powder – 2 tbsp
Method
- Take a pan and add rice and water.
- Wash them well, drain, and keep them aside.
- Heat a pan and roast the rice till it changes its colour uniformly to a darker shade.
- once it’s crisp and shrinks them well.
- Then transfer it to a plate and let it cool down.
- Add cashew nuts and roast them well.Transfer it to a plate and set it aside.
- Then grind the roasted rice into a fine powder and set it aside.
- Then grind the cashewnut into a fine powder and set it aside.
- Then crush the cardamom into a fine powder and set it aside.
- Then grated the jaggery and set it aside.
- Take a pan, Add a quarter portion of roasted, ground rice.
- Then add the roasted cashewnut mix.Again, add grated coconut and jaggery.
- Add crushed cardamom and dry ginger powder.Mix them well with your hands.
- Then grab some of the mixture and shape them into lime-sized balls by squeezing the mixture between your palms until it firms up.
- Then mix with the roasted riceground mix and set aside.
- Repeat the process till the entire mix is made into small balls.
- Serve the delicious cashew rice balls.
