Kerala Style Bucket Grilled Chicken Recipe

Step 1

Paste 1
Ingredients :
Dry chillies – 20-25 pieces
Turmeric powder- 1 1/2 tspoon
Salt – as required to the chicken

Paste 2
Coriander – 3 spoon
Black Pepper – 3 spoon

Paste 3
Garlic – 10-15 pieces
Ginger – take the equal quantity to garlic

Paste 4
Fennel Seeds- 1/2 tspoon
Poppy Seeds- 1/2 tspoon
Cinnamon – 2-3 pieces

Grind the all the ingredients seperately with less or no water and make sure paste should be very smooth fine thick paste( Grind paste 1 to paste 4 seperately ).

Ingredients
Lemon – 1

Mix all the grounded paste together along with Lemon juice and keep it aside.

Step 3

Clean the full chicken ( chicken should have neck to leg for this recipe ) with turmeric powder and salt and make a small cut everywhere on the chicken which helps to get the masalas flavors deeply into the chicken while cooking.

STEP 4

Apply thick grounded paste to the full chicken and leave it for 1- 2 hours.

Step 5

Fix a thick stick into earth and stick the chicken in to top of the stick, make sure stick should be well placed in to the ground.

Step 6

Cover the chicken with the help of strong iron made vessel or bucket inorder to get enough fire to get cooked chicken inside also get enough smoky taste to the chicken.

Step 7

Fire enough evenly on top of chicken with the help of coconut trunk, shell, dried leaves few minutes.

Step 8

Take the iron bucket off from the chicken. Now Remove cooked smokey bucket chicken from the stick. Serve Hot with sliced onion.
