INGREDIENTS
- 15 dates
- 2 balls jaggery (melted)
- 1 tsp tamarind paste
- 75-100 gm grated ginger
- 2 bulbs of garlic
- 5-6 green chillies
- 3 bunches curry leaves
- 1 tsp mustard seeds
- 2 tbsp oil
- 2 tsp chilli powder
- ½ tsp turmeric powder
- 1 tsp coriander powder
- Salt as required
METHOD
- Heat oil in a pan and splutter the mustard seeds
- Sauté ginger, garlic, green chillies and curry leaves in it
- After the water from the ginger has completely evaporated, add chilli powder, turmeric powder and coriander powder
- Sauté until the raw smell is off
- Into it add the melted jaggery and water if required
- Now add the tamarind paste or tamarind water and salt as required
- Add the dates and mix well
- Cook until the dates are cooked soft and the water gets reduced.
