Kerala Style Garlic Pickle

Ingredients

  • Garlic -1/2 kg
  • Green chilli – 3 or 4 nos
  • Red chilli powder – 1 tbsp
  • Fenugreek powder – 1 tsp
  • Asafoetida powder – 1 tsp
  • Vinegar – 1 tbsp
  • Salt – 1 or 2 tsp
  • Oil – 3 or 4 tbsp

Method

  • Then peel garlic and set aside
  • Then cut it in half lengthwise and set it aside.
  • Then chopped green chilli and set aside.
  • Heat oil in a pan ,add mustard seed
  • Lets them spluttered.
  • Then add curry leaves and green chilli
  • Saute them well.
  • Then add garlic and saute them well.
  • Then add red chilli powder ,fenugreek powder,asafoetida powder and salt
  • Saute till the raw smell disappears.
  • Then pour some vinegar and mix them well.
  • Then add grated jaggery and saute them well.
  • Cook for few more minutes
  • Remove from fire and keep aside.
