Ingredients
- Onion – 3 nos
- Ginger – 1 nos
- Garlic – 6 to 7 nos
- Tomatoes – 2 nos
- Grated coconut – 1 cup
- Coriander powder – 1 tbsp
- Red chilli powder – 1 1/2 tbsp
- Turmeric powder – 1/2 tbsp
- Garam masala – 1 tbsp
- Cumin seed – 1 tsp
- Fennel seed – 1 tsp
- Mustard seed – 1 tsp
- Salt – 2 to 3 tsp
- Oil – 4 to 5 tbsp
Method
- Firstly, we have to crush the ginger and garlic into a fine paste and set it aside.
- Then grind the tomatoes into a fine puree and set aside.
- Take a bowl, add grated coconut and water.
- Squeeze them well with your hands.
- Drain them well and set them aside.
- Heat oil in, add mustard seeds to a pan and let them splatter.
- Add green chilli and ginger garlic paste,saute them well.
- Then add chopped onion and curry leaves.
- Saute them well.
- Sprinkle with salt and cook until the onion becomes transulant.
- Add coriander powder, red chilli powder, and turmeric powder.
- Then add garam masala and a crushed paste of cumin-fennel seed mix.
- Saute them well for few minutes.
- Add the cleaned chicken pieces and combine them well.
- Then add a fine puree of tomato paste and combine them well.
- Sprinkle some salt and mix them well.
- Cover and cook them well.
- Remove the lid and sauté them well.
- Pour coconut milk and combine them well.
- Stir and cook them well.
- Remove from fire and set aside.
- Serve the tasty curry with meals.

- Basmati rice – 1 kg
- Onion – 3 nos
- Carrot – 2 nos
- Cashew nut – 12 to 13 nos
- Raisins – 10 to 12 nos
- Oil – 3 to 4 tbs
- Ghee – 2 to 3 tbsp
- Salt – 2 to 3 tbsp
Method
- Take a pan,add basmati rice and water.
- Washed them well, drained them, and set them aside.
- Heat oil and ghee in a pan.
- Add the chopped onion and fry them well until they become a light golden brown.
- Then add some cashew nuts and saute them well.
- Add some raisins and sauté them well.
- Drain and set aside.
- Heat oil and ghee in a pan.
- Add drained basmati rice and water,Saute them well.
- Sprinkle some salt and combine them well.
- Cover and cook them well.
- Remove the lid and saute the cooked rice
- Then add the chopped carrots, fried onion and cashewnut mix,combine them well.
- Remove from fire and set aside.
- Serve the tasty ghee rice with chicken curry.
