Tasty Kerala Ghee Rice & Chicken Curry – Ghee Rice & Chicken Curry

Ingredients

  • Onion – 3 nos
  • Ginger – 1 nos
  • Garlic – 6 to 7 nos
  • Tomatoes – 2 nos
  • Grated coconut – 1 cup
  • Coriander powder – 1 tbsp
  • Red chilli powder – 1 1/2 tbsp
  • Turmeric powder – 1/2 tbsp
  • Garam masala – 1 tbsp
  • Cumin seed – 1 tsp
  • Fennel seed – 1 tsp
  • Mustard seed – 1 tsp
  • Salt – 2 to 3 tsp
  • Oil – 4 to 5 tbsp

Method

  • Firstly, we have to crush the ginger and garlic into a fine paste and set it aside.
  • Then grind the tomatoes into a fine puree and set aside.
  • Take a bowl, add grated coconut and water.
  • Squeeze them well with your hands.
  • Drain them well and set them aside.
  • Heat oil in, add mustard seeds to a pan and let them splatter.
  • Add green chilli and ginger garlic paste,saute them well.
  • Then add chopped onion and curry leaves.
  • Saute them well.
  • Sprinkle with salt and cook until the onion becomes transulant.
  • Add coriander powder, red chilli powder, and turmeric powder.
  • Then add garam masala and a crushed paste of cumin-fennel seed mix.
  • Saute them well for few minutes.
  • Add the cleaned chicken pieces and combine them well.
  • Then add a fine puree of tomato paste and combine them well.
  • Sprinkle some salt and mix them well.
  • Cover and cook them well.
  • Remove the lid and sauté them well.
  • Pour coconut milk and combine them well.
  • Stir and cook them well.
  • Remove from fire and set aside.
  • Serve the tasty curry with meals.

  • Basmati rice – 1 kg
  • Onion – 3 nos
  • Carrot – 2 nos
  • Cashew nut – 12 to 13 nos
  • Raisins – 10 to 12 nos
  • Oil – 3 to 4 tbs
  • Ghee – 2 to 3 tbsp
  • Salt – 2 to 3 tbsp

Method

  • Take a pan,add basmati rice and water.
  • Washed them well, drained them, and set them aside.
  • Heat oil and ghee in a pan.
  • Add the chopped onion and fry them well until they become a light golden brown.
  • Then add some cashew nuts and saute them well.
  • Add some raisins and sauté them well.
  • Drain and set aside.
  • Heat oil and ghee in a pan.
  • Add drained basmati rice and water,Saute them well.
  • Sprinkle some salt and combine them well.
  • Cover and cook them well.
  • Remove the lid and saute the cooked rice
  • Then add the chopped carrots, fried onion and cashewnut mix,combine them well.
  • Remove from fire and set aside.
  • Serve the tasty ghee rice with chicken curry.
