Ingredients:
- Hard Boiled Eggs : 5 nos
- Potato : 1 (medium,)
- Carrot-2 nos
- Drum stick -2 or 3 nos
- Onion-2 nos
- Grated Coconut : 2 cups
- Cumin Seeds : 1 tsp
- Shallots : 2 nos
- Turmeric Powder : 1/4 tsp
- Green chillies : 3-4 nos (slit lengthwise)
- Curry leaves : 1 sprig
- Coconut Oil : 2 tbsp
- Salt to taste
Method
- First we boil the eggs, deshell and cut each hard boiled egg into 2 pieces
length-wise. - Take a pan add cut small pieces of
potato,carrot,drumstick,onion,curryleaves turmeric powder,salt and
small quantity of coconut oil mix well and cook until it become soft. - Then we grind grated coconut, cumin seeds, small red onion, garlic , and
enough water to make a smooth paste. - Then we add grated tomato and coconut paste into the pan and mix well
- Now add the egg and mix carefully
- Cook on medium-low flame , stirring carefully
- Turn of the flame and serve the kerala style egg avial with meals…
