Kerala style elephant yam erissery(chena erissery)
Ingredients
- Elephant yam -1 medium size
- Water -1cup
- Coconut oil-20r 3 tsps
For grinding
- Red chilli-2 or 3nos
- Turmeric-1/4 tsp
- Grated coconut-1 cup
- Garlic -4or 5
- Cumin seed-1tsp
tempering
- Oil- 2 or 3 tbsp
- Pearl onion 3or4 nos
- Mustard seed-1tsp
- Curry leaves -2sprig
Method
- Take a heavy bottom pan add yam along with little water,coconut oil
- Cover the pan and cook till it become soft
- Grind together grated coconut,red chilli,cumin seed, garlic, turmeric and salt ,to a smooth
paste. - Then we chopped, pearl onion ,red chilli
- Heat oil in a pan and add mustard seed ,red chilli ,pearl onion, grated coconut till become
golden brown in colour. - Take another pan, yam paste and grinded coconut paste and then we add the fried coconut
and mix well - Cover and cook on low flame for 5 to 10 minutes
- Remove the lid and mix well
- Serve hot with rice
