Ingredients
- Chicken – 2 Kg (cleaned and washed in turmeric water)
- Onion – 7 to 8 (finely sliced)
- Shallot – 6 to 7 (finely sliced)
- Green chili – 5 (split into 2 half)
- Dry red chili – 4
- Ginger garlic smashed – 3 Tsp
- Mustard seeds – ½ Tsp
- Cinnamon – 6 small pieces
- Cloves – 2 to 4
- Star anise – 2
- Curry leaf – 3 to 4 sprig
- Turmeric powder – ½ Tsp
- Chili powder – 1 tsp
- Coriander Powder – 1 ½ tsp
- Fennel Powder – 1 tsp
- Black pepper powder – 4 tsp
- Garam masala powder – 1 tsp
- Oil – ½ Kg
- Salt for taste
- Water as required
Method
- Firstly, in a pan heat the oil, then add mustard seeds, sliced onion, shallot and green chilly mix it well and
then add the dry red chili and mix it well - To the mix add cinnamon, cloves, and star anise, ginger garlic and curry leaf then add salt for taste and
blend it well - Now add the curry powders to it. First add ½ tsp turmeric powder, 1 tsp chili powder, 1 ½ tsp coriander
powder, 1 tsp fennel powder, 2 tsp black pepper powder and 1 tsp of garam masala powder and sauté it
well. - Add chicken to the mix and blend it well, then add some water and leave it until the chicken is properly
cooked, in between add some more black pepper powder and blend it. - Now Pepper chicken masala is ready to serve and enjoy
