Meal Wrapped In Banana Leaf – Pothichoru

Ingredients

  • Rice – 2 or 3 cups
  • Water – 1 or 2 ltr

Method

  • Heat water in a pot ,cover and boil them well.
  • Wash rice at least 5 to 6 times.
  • Then add rice to the hot water
  • Cover and cook them well.
  • If you press the rice after it is cooked, the rice should be mashable but not too mushy.
  • Now drain the excess water.and place it a slant position so that the excess water drains away.

Ivy gourd thoran

Ingredients

  • Ivy gourd – 1 kg
  • Shallots – 9 to 10 nos
  • Garlic – 5 or 6 nos
  • Curry leaves – 2 or 3 sprigs
  • Grated coconut – 1 cup
  • Turmeric powder – 1 tsp
  • Cumin seed – 1 tbsp
  • Mustard seed – 1 tsp
  • Salt – 1 or 2 tbsp
  • Oil – 3 or 4 tbsp

Method

  • First we have to wash and drain the ivy gourd ,set aside.
  • Then chop the ivy gourd into small pieces
  • Then grind the green chilli and cumin seeds into a fine paste.
  • Then add grated coconut , turmeric, and curry leaves into a smooth paste
  • Again, add shallots and garlic into a fine paste, then combine and make a coarse mix.
  • Heat oil in a pan add mustard seeds.
  • Let them splutter.
  • Then add curry leaves and saute them well.
  • Then add chopped ivy gourd and saute them well.
  • Add coarse coconut mix and saute them well.
  • Sprinkle some salt and combine them well.
  • Cover and cook them well.
  • Remove from fire and set aside.
  • Serve the tasty ivy gourd Thoran (Kovakka Thoran ) with meals.

Fish fry

Ingredients

  • Mackerel fish – 1 kg
  • Ginger – 1 nos
  • Garlic – 7 or 8 nos
  • Dry red chilli – 5 or 6 nos
  • Coriander seed – 1 tbsp
  • Pepper seed – 1 tbsp
  • Turmeric powder – 1 tbsp
  • Salt – 1 or 2 tbsp
  • Oil – 5 or 6 tbsp

Method

  • Firstly, we have to cut and wash the fishes
  • Then make deep slits on both sides.
  • Then we have to grind dry red chilli,coriander seed,pepper seed,ginger and garlic into smooth paste ,set aside.
  • Take a pan add cleaned mackerel fishes.
  • Then add salt and turmeric powder
  • Now add grinded red chilli paste and mix them well.
  • Then marinated for half an hour.
  • Heat oil in a pan, add marinated fish and fry them well,
  • Then one side becomes crispy before flipping to the other side.
  • Fry both the sides till golden brown.
  • Drain and keep aside.
  • Serve the tasty mackerel fish fry with tasty meals

Grilled coconut chutney

Ingredients

  • Coconut – 1/2 pieces
  • Dry red chilli – 5 or 6 nos
  • Shallots – 6 to 7 nos
  • Ginger – 1 nos
  • Garlic – 6 or 7 nos
  • Curry leaves – 2 or 3 sprigs
  • Salt – 1 or 2 tbsp

Method

  • Firstly, we have to crush the coconut shell.
  • Remove the coconut pieces from the shell and grill them over the flame.
  • Then grill the dry red chilli and set aside.
  • Wash them well and drain ,set aside.
  • Then crushed the grilled coconut ,set aside.
  • Then grind grilled dried chilies and salt.
  • Again add crushed grilled coconut and grind them well.
  • Now we have to crush shallots,ginger ,garlic and curry leaves
  • Then combine them well and make a coarse mix.
  • Then transfer into a bowl and set aside.

Potato fry

Ingredients

  • Potato – 2 or 3 nos
  • Curry leaves – 2 or 3 sprigs
  • Turmeric powder – 1/2 tsp
  • Red chilli powder – 1 tbsp
  • Salt – 1 or 2 tbsp
  • Oil – 4 or 5 tbsp

Method

  • Firstly we have to peel the potatoes and set them aside.
  • Then chopped the potatoes into medium-sized cubes
  • Wash them well and set aside
  • Heat oil in a pan, add curry leaves
  • Then add chopped potato cubes and saute them well.
  • Add salt and turmeric powder,saute them well.
  • Then add red chilli powder and saute them well.
  • Cover and cook them well.
  • Continue to stir often and cook till the potatoes are lightly crisp.
  • Remove from fire and set aside.

Egg omelet

Ingredients

  • Egg – 2 nos
  • Shallots – 6 or 7 nos
  • Green chilli -2 or 3 nos
  • Salt – 1 or 2 tsp
  • Oil – 2 or 3 tbsp

Method

  • Take a bowl then chopped the shallots, green chilies and curry leaves
  • Crack in two eggs and beat well.
  • Heat oil in a pan
  • Then pour the beated egg mix and fry them well.
  • Then cook both sides and remove from pan and set aside

How to make the wrap

  • Keep the leaf over the flame still the rawness is gone
  • To the leaf serve the rice,potatato fry and kovaka thoran
  • Then place fried fish ,omelet, coconut chutney and pickle
  • Then fold and tie the wrap with string…
