Kerala Style Stuffed Sweet Idiyappam

Ingredients

  • Banana – 6 or 7 nos
  • Rice flour – 1 1/2
  • Grated coconut – 1 cup
  • Sugar- 3 or 4 tbsp
  • Cardamom – 4 or 5 nos
  • Cashew nut – 8 to 9 nos
  • Salt – 1 or 2 tbsp
  • Ghee – 5 or 6 tbsp

Method

  • Heat water in a steamer and place the idli mould
  • Then just cut the two edges and cut it in half .
  • Then we have to steam banana for 10 to 12 minutes
  • Then peel and chop one or two bananas.
  • Remove the lid and check whether the skin of the banana is starting to split in places.
  • Remove the steamed banana and allow it to cool.
  • Heat ghee in a pan.
  • Then add sliced bananas and saute well till they become light brown
  • Add grated coconut on top of the banana.
  • Then add crushed cardamom and sugar granules,saute them well.
  • Add cashewnut and saute them well.
  • Remove from fire and allow to cool .
  • Peel the steamed banana and cut it in half and remove the seeds.
  • Then grind them well into the smooth banana paste.
  • Heat water and salt in a pan
  • Then pour some ghee into the pan
  • They will stir and boil well.
  • Once it is hot, add rice flour and mix it well.
  • Stir until the mixture thickens up.
  • Then add ground bananna paste
  • Combine them well.
  • Remove from the heat and allow to cool.
  • When it is cool, mix them well with your hands and set them aside.
  • Then fill the dough into the idiyappam press and close the lid.
  • Take a banana sheet and press the dough into a circle shape onto the banana leaves.
  • Then spread some grated coconut banana mix on to the top of the dough and roll them well.
  • Then repeat the same process for the balance of the dough .
  • Then they placed the idiyappam dough into the steamer one by one .
  • cover and Cook for 8 to 10 minutes.
  • Once it is ready, remove the idiyappam from the steamer and set it aside.
  • Serve and enjoy the tasty stuffed idiyappam
