Tasty Chicken Curry

ingredients

  • Chicken – 1 kg
  • Shallots – 4 to 5 nos
  • Onion – 3 nos
  • Ginger – 1 nos
  • Garlic – 7 to 8 nos
  • Green chilli – 2 to 3 nos
  • Curry leaves – 2 to 3 sprigs
  • Tomatoes – 1 nos
  • Turmeric powder – 1/2 tbsp
  • Pepper powder – 1 tbsp
  • Garam masala – 1 tbsp
  • Grated coconut – 1 cup
  • Cinnamon- 1 or 2 nos
  • Cardamom – 3 to 4 nos
  • Cloves – 2 to 3 nos
  • Pepper seed – 1 tbsp
  • Indian bay leaves – 1 or 2 nos
  • Salt – 1 or 2 tsp
  • Oil -4 to 5 tbsp

Method

  • Take a pan,add cleaned chicken pieces.
  • Then add some salt, turmeric powder, pepper powder and garam masala.
  • Combine them all well and marinate for 15 to 20 minutes.
  • Take a bowl, add some grated coconut and some water.
  • Squeeze them well with your hands.
  • Drain the thick coconut milk and set it aside.
  • Again, add the squeezed coconut to a pan and add a sufficient amount of water.
  • squeezed them well.
  • Drain the thin coconut milk and set it aside.
  • Heat oil in a pan.
  • Add cardamom, cinnamon, cloves, and pepper seed and Indian bay leaves.
  • Then add the chopped ginger and garlic and saute until fragrant.
  • Add the chopped onion and saute them well.
  • Then add green chilies and saute them well.
  • Now add some curry leaves and saute for a few minutes.
  • Sprinkle with salt and saute the onion until translucent.
  • Add coriander powder, pepper powder, fennel seed and garam masala.
  • Saute them well.
  • Add the chopped tomatoes and saute till they become soft.
  • Now add marinated chicken pieces and mix them well.
  • Cover and cook until the chicken is well cooked.
  • Remove the lid and pour in the thin coconut milk.
  • Mix and cook them well.
  • Cover and cook them well.
  • Remove the lid, add some salt and mix them well.
  • Then add thick coconut milk and cook them well.
  • Take the pan off the heat and set it aside.
  • Heat oil in a pan .
  • Add the chopped shallots and saute them well.
  • Then add curry leaves and green chillies.
  • Saute and fry them well.
  • Remove from the heat and transfer the fried mixture to the chicken mappas pan.
  • Combine them well.
  • Serve the tasty chicken curry with appam.
