How to prepare
1) Clean the pumpkin skin and chop it into small pieces.
2) Grind coconut, cumin(1/4 teaspoon) green chilies (as per spice tolerance) turmeric powder, and salt to a fine paste.
3) Heat a pan. Add oil. Once the oil is hot add mustard seeds on crackling add thinly sliced shallots, dried chiles, and curry leaves. Once shallots are fried add the pumpkin skin and mix well.
4) Add the prepared paste to the above mixture and add some water. Cover and cook till the pumpkin skin softens.
Tasty pumpkin skin thoran ready.
