Ingredients
- Green peas
- Potato

Method
- Wash and Keep the green peas to cook.
- Wash the rice and soak it in water for 30 minutes.
- Peel the onions and finely slice and keep aside.
- Peel potatoes and cut them into cubes.
- Peel carrots and chop them into small cubes.
- Chop up the french beans.
- Clean ginger and garlic.
- Clean coriander and mint leaves and chop them up.
- Grind the whole spices to a paste on a stone grinder and keep aside.
- Crush ginger and garlic and keep aside.
- Heat oil in a uruli, add dried chilies. Saute in sliced onions. Add in the potatoes, carrots, french beans, and cooked green peas.
- Add in the crushed ginger and garlic along with the whole spices. Add the chopped leaves along with the lemon juice.
- Add chili powder, turmeric powder, and ghee.
- Strain the rice and add it to the vegetable mix and saute well.
- Add water till the water covers the rice. Add ghee, cover, and cook.
- Open the lid and mix the rice when water is all absorbed. Remove from flame and keep aside. Keep the lid closed for few minutes.
- Vegetable Pulao is ready
- Serve with pappadam and raita made with sliced onion, tomatoes, green chilies, chopped ginger, and curd
