Kerala Breakfast Soft Idiyappam With Egg Curry – Noolappam

Ingredients

  • Egg – 4 or 5 nos
  • Potatoes – 2 nos
  • Onion – 3 nos
  • Green chilli – 3 or 4 nos
  • Curry leaves – 3 or 4 sprigs
  • Ginger – 1nos
  • Garlic – 7 or 8 nos
  • Grated coconut – 1 cup
  • Cardamom – 3 nos
  • Cinnamon – 1 nos
  • Star anise – 1 or 2nos
  • Cloves -2 or 3 nos
  • Turmeric powder – 1/2 tbsp
  • Coriander powder -1 tbsp
  • Garam masala- 1 tbsp
  • Pepper powder – 1/2 tbsp
  • Salt – 1 or 2 tsp
  • Oil – 1 or 2 tbsp

Method

  • Heat water in a pan add potatoes ,boil them well.
  • Remove the potatoes from the hot water and keep aside.
  • Then add eggs into the hot water pan and boil them well.
  • Then we have to crush ginger and garlic ,set aside.
  • Take a bowl add grated coconut and lIttle amount of water, squeeze them well.
  • Drain the  coconut milk and keep aside.
  • Then we have to remove the boiled egg from the hot water and dip into cold water.
  • Then peel the boiled potatoes outer cover and cut it into small pieces.
  • Then we have to peel the boiled egg shells and cut it into half.
  • Heat oil in a medium size pan add cardamom, cinnamon ,star anise and cloves, saute for a second.
  • Add chopped onion and green chilli ,saute them well.
  • Add curry leaves and saute for a seconds.
  • Then we have to add crushed ginger and garlic paste ,saute till shallots become translucent.
  • Then add dry spices like turmeric powder ,coriander powder, garam masala and pepper powder .
  • Saute until the raw smell of the spices completely disappears.
  • Add some salt and combine them well.
  • Pour sufficient amount of water and mix them well.
  • Add cooked potato pieces and coconut milk, mix them well and cook
  • Then add some salt for taste and cook for 5 to 6 minutes.
  • Finally add boiled egg pieces and cook for some minutes.
  • Remove from fire and keep aside.

Ingredients

  • Rice flour – 2 cup
  • Hot water – 1 or 2 cups
  • Grated coconut -1 cup

Method

 

  • Heat water in a idli steamer.
  • Take a bowl add rice flour and hot water little by little ,mixing throughly until to a smooth dough.
  • Then fill the dough into the idiyappam press and close the lid.
  • Then we have to take the idli plates .sprinkle a little amount of grated coconut on each idli plate .
  • Them squeeze the idiyappam press ,the dough on to the idli plate in a circular motion.
  • Steam well for 10 to 15 minutes till done.
  • Remove the idli plates from the steamer .
  • Serve the tasty idiyappam with egg curry
