Kerala Style Jackfruit Rags Mixture

Ingredients

  • Jackfruit Rags – 2 to 3 cups
  • Curry leaves – 2 to 3 sprigs
  • Peanut – 1 cup
  • Toor Dal – 1 cup
  • Rice Flakes – 1 cup
  • Red chilli powder – 2 tsp
  • Asafoetida powder – 1 tsp
  • Salt – 1 or 2 tsp
  • Oil – 1/2 ltr

Method

  • Firstly, we have to cut the jackfruit into two portions.
  • Then remove the outer green coloured throne.
  • Then cut the jackfruit and set it aside.
  • Then separated the rags from the jackfruit and kept them aside.
  • Heat oil in a pan and add jackfruit rags.
  • Then fry till the colour changes to a light golden brown.
  • Drain and keep a side.
  • Repeat the same process with balanced jackfruit rags and keep it aside.
  • Again, add peanuts to the hot oil.
  • Saute and fry them well.
  • Drain them well and keep them aside.
  • Now add the toor dal and fry them well.
  • Drain them well and keep them aside.
  • Then add some rice flakes to the hot oil.
  • Saute and fry till the rice flakes become crisp.
  • Drain them well and keep them aside.
  • Again, add some curry leaves to the hot oil.
  • Fry them, drain them well, and set them aside.
  • Take a banana leaf and add fried jackfruit rags.
  • Then add fried peanuts and toor dal.
  • Then add fried rice flakes.
  • Then sprinkle some red chilli powder, asafoetida powder and salt.
  • Combine them well with your hands.
  • Then add some fried rice flakes and mix them well.
  • Finally, sprinkle some curry leaves on them and mix them well.
  • Enjoy the tasty jackfruit rags mixture with tea or coffee.
