KANJI AND ASTRAM

Method

Astram

*Yam / chena – 1 cup.

*Taro root / chembu – 1 cup.

*Purple yam / Kachil-1/2 cup

*Tapioca – 1 cup.

*Raw banana – 1 cup.

*Pumpkin – 1 cup.

*White pumpkin – 1 cup.

*Cucumber – 1 cup.

*Snake Gourd – 1 cup.

*Green chilies – 6 nos.

*Grated coconut – 1 cup.

*Onion – 2 big.

*Coconut oil – 1 tablespoon.

*Chili powder – 1 tablespoon.

*Turmeric powder – 1/2 teaspoon.

*Water – as required.

*Black-eyed beans – 1/2 kg.

For paste

*Grated coconut – 1/4 cup.

*Cumin – 1 teaspoon.

*Garlic – 5 cloves.

*Shallots – 2 nos.

For seasoning

*Coconut oil – 1/2 tablespoon.

*Mustard – 1 teaspoon.

*Shallots -3 nos.

*Grated coconut – 1/4 cup.

*Curry leaves – 2 stems.

Kanji

*Matta rice – 2 cups.

*Water – as required.

*Salt – as required.

Method

1) Clean all vegetables and cut them into small pieces.

2) Cook black-eyed beans.

3) In another pot heat water to cook the rice for kanji.

4) To the chopped vegetable add curry leaves, green chilies, onion, coconut oil, chili powder, and turmeric powder. Mix all the ingredients well and add in water and cook it.

5) When the vegetables are half done season it with salt.

6) Make the paste with the ingredients mentioned.

7) To the cooked vegetable mix in the paste and black-eyed beans.

8) Heat a pan for seasoning. Add in oil and splutter mustard. Saute the remaining ingredients mentioned for seasoning and add it to the astram.

Healthy kanji and astram is ready
