Kerala Style Jack fruit Core Coconut Stir Fry


  • Jackfruit core – 1 1/2
  • Green chilli – 2 to 3 nos
  • Garlic – 8 to 9 nos
  • Curry leaves – 3 to 4 sprigs
  • Cumin seed -1 tsp
  • Grated coconut – 1/2 cup
  • Turmeric powder – 1/2 tsp
  • Dry red chilli – 3 to 4 sprigs
  • Mustard seed – 1 tsp
  • Salt – 1 or 2 tsp


  • Firstly, we have to remove the outer thorny green skin of the jackfruit and cut it in half.
  • Then separate the jackfruit and core, set aside.
  • Then chop the jackfruit core and set it aside.
  • Then grind green chilli, cumin seed and garlic into a fine paste.
  • Again, add grated coconut, turmeric powder and curry leaves to the coarse paste and keep aside.
  • Heat oil in a pan,add mustard seed and let them splutter.
  • Then add dry red chillies and shallots and sauté them well.
  • Then add a few curry leaves and saute them aside.
  • Add the chopped jackfruit core and mix them well.
  • Then add the grounded coconut mix and pour a little bit of water.
  • Sprinkle some salt on them and mix them well.
  • Cover and cook till the core becomes soft.
  • Cook for a few minutes till the thoran is completely cooked and the water has dried.
  • Remove from the fire and set aside.
  • Serve the tasty jackfruit core stir fry with meals.
