Instant Garlic Pickle – Kerala Style Garlic Pickle



  • Garlic – 1kg
  • Ginger – 1 big pieces
  • Dry red chilli – 3 to 4 nos
  • Red chilli powder – 2 tbsp
  • Fenugreek powder – 1/2 tbsp
  • Cumin seed powder – 1/2 tbsp
  • Asafoetida powder – 1/2 tbsp
  • Mustard seed – 1 tsp
  • Mustard oil – 6 to 7 tbsp
  • Salt – 1 or 2 tsp


  • Firstly, we have to peel the garlic and keep it aside.
  • Then peel the ginger and set it aside.
  • Wash the peeled ginger and chop them well.
  • Then washed the peeled garlic and set it aside.
  • Then cut it into two slits and keep it aside.
  • Heat mustard oil in a heavy bottomed pan.
  • Add mustard seeds and let them splutter.
  • Then add dry red chilli and curry leaves.
  • Saute them well for a few minutes.
  • Add chopped ginger and saute them well.
  • Then add the garlic and saute them well for a few minutes.
  • Add red chilli powder, fenugreek powder,cumin seed powder and asafoetida powder.
  • Add some salt and combine them well.
  • Saute them well till the raw smell completely disappears.
  • Add some vinegar to the top and combine them well.
  • Cook and saute for a few minutes.
  • Remove from the fire and set aside.
  • Serve the tasty garlic pickles with meals.
