Kerala style biryani recipe


  • basmati rice-1kg
  • chicken -1 kg im89
  • onion-7 or 8 nos
  • garlic-10 to 12
  • ginger-1 medium size
  • green chilli-5 or 6
  • ghee-1/2 kg
  • Cardamom-3 or 4 nos
  • Clove-2
  • Star anise -2 nos
  • Bay leaves-1 nos
  • Water -1 litre
  • Lemon juice -1 nos
  • Mustard seed-1/2 tsp
  • Turmeric powder-1/2 tbsp
  • Red chilli powder-2 tbsp
  • Coriander powder-1 tbsp
  • garam masala powder-1tbsp
  • pepper powder-1 tbsp
  • cumin powder-1 tbsp
  • curry leaves-4 sprigs
  • Cashew nut -250 grm
  • dry grapes-250 grms
  • salt to taste
  • oil –small amount


  •  first we clean the basmathi rice and keep it in a side
  •  then we crush the ginger and garlic
  •  heat ghee in a large pot add cloves, cardamom pods,  bay leaves, star anise of
    water to a boil in a large pot over high heat.  Drain and transfer the rice and spices to
    a medium bowl.
  •  Heat oil in a pan and add the onions. On a medium flame, shallow fry the onions
    for 10 to 12 minutes till they are a deep golden brown, without burning them.
    Drain and keep it in a side
  •  Heat oil in another pan add mustard seed and it become splutter
  •  Add crushed ginger garlic ,green chili and onion ,sauted for some minute
  •  Then we add turmeric powder,chilli powder,coriander powder,pepper powder
    ,garam masala and cumin powder mix well
  •  Again we add cinnamon cloves cardamom bay leaves and star anise.
  • Add chicken peace,curry leaves and fried onion mix well
  •  Then we take a pan add ghee ,cashew and dry grapes for frying
  •  At last we compain chicken ,basumathi rice and garnished
  •  Turn off the flame and serve kerala style biryani .enjoy the receipe
